Breakfast Ham & Egg Rollups

Turn your ordinary omelette into a gourmet breakfast by rolling it up inside a slice of ham! Then take it to the next level by topping the roll-ups with cheddar cheese (or hollandaise sauce)! So yummy!

Start by preparing a vegetable mixture for the omelette. You can use any combination of vegetables you like. For this omelette, I used spinach, mushrooms, green onion, and green pepper.

Whisk eggs with heavy cream (for fluffiness) and salt and pepper.

Saute the vegetable mixture in coconut or avocado oil until cooked.

Add egg mixture and flip omelette when cooked on bottom. You can divide in half to flip easier if using a large fry pan.

Cut up pieces of the omelette and place on top of each ham slice. Then roll up. You can also use tortillas to wrap the omelette in, if you don’t want to use ham (see my recipe for tortillas in Beef Enchiladas recipe). Heck, you can even wrap the omelette in bacon slices!

Put roll-ups inside a baking dish and sprinkle with a shredded cheddar cheese topping. Another topping idea is hollandaise sauce. See my recipe for low carb eggs benedict.

Then bake at 350 for a few minutes to melt the cheese. And serve!

These also make a “breakfast on the go” if you omit the cheese topping. Just store them in a container and grab for later!

Ingredients
  • 4 Eggs
  • 2 TB Heavy cream
  • pinch Salt & Pepper
  • 6 slices Ham (packaged slices)
  • Cheddar Cheese, shredded (for topping)
Omelette Vegetables:
  • 1/4 Green pepper, diced
  • 1 Green onion, chopped
  • 1/2 cup Mushrooms, diced
  • 1 cup Spinach, fresh
Instructions
  1. Whisk eggs, cream, salt and pepper. Set aside

  2. Chop vegetables for omelette. Oil fry pan with coconut or avocado oil and add chopped vegetable mixture. Saute for about 3 minutes until cooked. NOTE: Can use any combination of vegetables of your choice instead of the above.

  3. Pour egg mixture into pan and flip omelette when cooked on bottom to cook on other side. NOTE: Can divide in half to flip more easily since omelette is going to be cut up into portions.

  4. Divide omelette into portions and place on top of ham slices. Then roll up and place in a baking dish.

  5. Sprinkle cheddar cheese over top and bake at 350 for 3-4 minutes until cheese is melted. NOTE: Can use hollandaise sauce over top instead of cheddar cheese, in which case no baking is necessary.
