Cheese Quesadilla With Guacamole & Sour Cream

While most guacamole is made with avocados and homemade mayonnaise, I make mine with avocado and sour cream (and salt to taste).

I used homemade tortillas (from recipe at KetoConnect) and shredded cheddar cheese to make the quesadilla, then just spread the guacamole mix over the soft tortillas and cut up into slices (or you can fry the tortillas in oil to get a crispy chip and dip in the guacamole).

With guacamole, like an avocado, you’re eating a wonderful high fat snack, so it’s a great way to boost weight loss! I find this a simple and filling snack (or even for lunch).

Ingredients
  • Homemade Tortillas (see link to recipe in post)
  • Cheddar Cheese, shredded
  • Avocado
  • Sour Cream
Instructions
  1. Put tortilla in a pan and sprinkle cheese over half of it, then fold in half and brown on both sides (until cheese is melted)

  2. Mash avocado with sour cream and a pinch of salt. Spread over top of t up quesadilla and cut up into pieces.
