Cheesy Fried Egglant

A tasty side dish that even non-eggplant-lovers will like! The eggplant is dipped in eggs and cheddar cheese, then fried to a yummy mouthful that will delight most anyone.

- 1 Eggplant, sliced
- Shredded Cheddar Cheese
- 2 Eggs
Cut eggplant into thin slices.
In one bowl add cheddar cheese. In another bowl add whisked eggs.
Dip each eggplant slice into the eggs, then in the cheese. Fry in avocado or coconut oil (make sure pan is very hot before adding eggplant). Cook until brown on each side (about 2-3 minutes on each side).
