Chunky Fudgey Low Carb Brownies
This is a very nice chewy fudge brownie from Buzzfeed with melted chunks of chocolate inside. It is so tasty, you won’t know you’re eating a Keto-friendly diet food!
- 8 oz Chocolate (2 bars), unsweetened
- 3/4 Cup Butter, melted
- 1 1/4 Cup Swerve sweetener
- 2 Lg Eggs
- 2 Tsp Vanilla extract
- 3/4 Cup Almond Flour
- 1/4 Cup Cocoa
- 1 Tsp Salt
Chop chocolate into chunks. Melt half (1 bar) and save rest.
Mix butter and Swerve. Then beat in the eggs and vanilla for 1-2 minutes until the mixture is fluffy.
Stir in the melted chocolate (after cools a bit), then sift in the flour, cocoa and salt.
Fold the dry ingredients into the wet ingredients. Don't over mix (or brownies will be more cake-like in texture)
Fold in the chocolate chunks. Then transfer the batter into a parchment lined square baking pan.
Bake at 350 for 20-25 minutes - depending on how fudgey you like your brownies. Let cool completely before cutting and serving.
