Homemade Keto Mayonnaise
The perfect alternative to store-bought mayo (which contains ingredients not-so-friendly for the keto diet). Tastes like the real deal!

- 1 Lg Egg (room temp)
- 1 TB Dijon mustard
- 1 TB White wine vinegar
- 1/4 Tsp Salt
- 1 Tsp Lemon juice
- 1 TB Whey (lasts longer in fridge)
- 3/4 cup Avocado oil
Add all ingredients except the oil into a food processor
Blend in processor for 20 seconds. Scrape the sides and bottom of the bowl and turn on again.
SLOWLY add the oil, in SMALL amounts, even tiny drops, into the processor while its blending.
When you notice the mixture beginning to thicken, you can add the oil a little faster. Continue to add the oil in a very thin stream.
Once all the oil is added, scrape the bottom and sides of the bowl and process for an additional few seconds.
