Keto Banana Pancake Roll-ups With Homemade Maple Syrup

Banana fruit is not part of a keto diet since it converts to sugar and high in carbs so the alternative for having this flavor in our cooking is to use banana extract. This recipe goes beyond that by creating a “pigs in a blanket” pancake with cooked bacon rolled up inside (can use keto-friendly sausage links instead). And this recipe includes a homemade maple syrup to boot!

Ingredients
  • Grain-free Pancake Mix Paleo mix
  • 1/4 Tsp Banana Extract
  • 1/4 Tsp Vanilla extract
  • 6 Strips Bacon
MAPLE SYRUP
  • 1 Cup Water
  • 1/2 Cup Swerve sweetener, powdered
  • 1 1/2 TB Maple Extract
  • 1/4 Tsp Xanthan Gum
Instructions
  1. Prepare pancake mix and cook per instructions on package, then set aside (keep warm).

  2. Cook bacon (in oven or stove-top)

  3. Roll a couple of cooked bacon strips in a pancake. Pour the homemade maple syrup over the top and serve. (you can sprinkle powdered Swerve on top if desired)


MAPLE SYRUP
  1. Whisk together the water, powdered Swerve, maple extract and vanilla extract in a saucepan. Bring to a gentle boil, then simmer for about 5 minutes until Swerve dissolves.

  2. Pour mixture into a blender and puree. Slowly add Xanthan Gum until smooth (no lumps).

  3. Let the mixture sit to allow the syrup to thicken. After use, store in refrigerator.
