The mushroom Dijon gravy is what makes this a very delicious chicken dish. Somehow, some way, this gravy transforms chicken into a nice gourmet meal!

Ingredients
  • 3-4 Chicken breasts, de-boned
  • Chicken seasoning: Garlic powder, onion powder, all-purpose, paprika
  • Coconut Aminos
  • Olive oil
  • Butter (for fry pan)
GRAVY:
  • 1 Pkge Fresh mushrooms
  • 1 cup Chicken (or bone) broth
  • 1 TB Dijon mustard
  • 1 TB Balsamic vinegar
  • 1 Tsp Minced garlic
  • 1/4 cup Heavy cream
  • 1 TB Coconut Aminos
  • 1 Tsp Cream of Tartar (or geletin) - to thicken
  • 1/2 Tsp Chia Seeds
  • pinch Salt & pepper
Instructions
  1. Pour some olive oil and coconut aminos over chicken, then add chicken seasoning.

  2. In fry pan, add some oil and cook chicken - each side approx 15 minutes until fully cooked. Baste with pan juices every now and then.

  3. In another fry pan, add butter and mushrooms. Cook mushrooms a few minutes, then add rest of the gravy ingredients. Stir frequently (recommend stirring constantly) for 5 minutes.

  4. When chicken is cooked, pour gravy over chicken and serve!
