Keto Chicken & Mushroom Dijon Gravy

The mushroom Dijon gravy is what makes this a very delicious chicken dish. Somehow, some way, this gravy transforms chicken into a nice gourmet meal!

- 3-4 Chicken breasts, de-boned
- Chicken seasoning: Garlic powder, onion powder, all-purpose, paprika
- Coconut Aminos
- Olive oil
- Butter (for fry pan)
- 1 Pkge Fresh mushrooms
- 1 cup Chicken (or bone) broth
- 1 TB Dijon mustard
- 1 TB Balsamic vinegar
- 1 Tsp Minced garlic
- 1/4 cup Heavy cream
- 1 TB Coconut Aminos
- 1 Tsp Cream of Tartar (or geletin) - to thicken
- 1/2 Tsp Chia Seeds
- pinch Salt & pepper
Pour some olive oil and coconut aminos over chicken, then add chicken seasoning.
In fry pan, add some oil and cook chicken - each side approx 15 minutes until fully cooked. Baste with pan juices every now and then.
In another fry pan, add butter and mushrooms. Cook mushrooms a few minutes, then add rest of the gravy ingredients. Stir frequently (recommend stirring constantly) for 5 minutes.
When chicken is cooked, pour gravy over chicken and serve!
