Keto Chicken Fajitas
Chicken (or beef) fajitas is a dish that would normally be keto-friendly, however often times the ingredients of the fajita marinade sauce contains non-keto ingredients. Same goes for the tortilla having non-keto ingredients. So we can make our own or find off-the-shelf products that fit the keto lifestyle.
And finding a packaged fajita sauce that has good ingredients can be tricky, but these do exist. The food manufacturer “Simply Organic” makes such a fajita sauce, and that is the sauce that is used in this recipe.
Siete makes Almond Flour grain-free tortillas, which is a nice thing to have around when you don’t have time (or desire) to make homemade tortillas. These were also used in this recipe.
The recipe is rather simple once you have the right sauce and tortillas. And it’s all done in one pan!
- Cooked chicken, in small slices (or beef)
- Green pepper, cut in slices
- Red pepper, cut in slices
- Orange and/or Yellow peppers, cut in slices (optional)
- Onion, cut in slices
- Fajita sauce (Simply Organic) - or homemade
- Tortillas (Sieta Almond Flour Tortillas) - or homemade
- Avocado, mashed (for topping)
- Sour cream (for topping)
Slice up the vegetables and chicken.
Saute the vegetables in coconut oil over medium to high heat (in a deep fry pan), then add the cooked chicken and fajita sauce. Lower the stove burner and cook for about 5 minutes in low heat.
Warm up tortillas and serve vegetable and chicken mix over tortillas. Add mashed avocado and sour cream for a topping, if desired.
