Keto Low Carb “Fathead” Pancakes
These pancakes include cream cheese to add that “good fat” ingredient to this recipe, and you end up with fluffy, tasty pancakes!
- 4 Eggs
- 4 oz Cream cheese (softened at room temp)
- 1/2 Tsp Vanilla extract
- 1 TB Coconut flour
- 1 TB Monkfruit sweetener (or sweetener of choice)
- 1/2 Tsp Baking soda
- 1 Tsp Baking powder
Mix all wet ingredients together in a bowl. May need to blend with hand mixer to get cream cheese smooth/blended.
Add dry ingredients and stir until well blended. If too thick, you can add coconut oil to the mix.
Cook over stove in a large fry pan or grill until golden on each side. NOTE: These do NOT bubble on top to indicate the need to flip to other side.
Serve with topping of butter and sugar-free pancake syrup
