Keto Rutabaga “Potato” Chips
You will love how a rutabaga gives you that perfect alternative to potato chips. The rutabaga, swede, or neep is a root vegetable but is lower in carbs than a potato. The fiber of a rutabaga lowers the carb content, making it only 7 net carbs.
Essentially, I discovered I can make a rutabaga chip recipe using the same recipe to make potato chips, so I did and they came out great (but needed longer baking time than a potato).
- 2 Rutabagas
- Avocado or coconut oil
Peel the rutabagas and slice them into thin "chip" pieces.
Put in a bowl and add oil and salt. Mix together
Put on a cookie sheet in a single layer. Bake at 400 for 20-30 minutes. Sprinkle more salt after taking out of oven.
