Keto Sushi Rolls
For sushi lovers on the keto diet, it’s not over. This cauli-rice for sushi makes fantastic sushi rolls!
- 1/2 head Cauliflower
- 2 oz Cream cheese
- 1 Cucumber
- 2 Avocados
- Nori sheets
- Coconut Aminos
Steam the cut up cauliflower until cooked - about 8-10 minutes
Put cooked cauliflower in food processor. Run it for a couple seconds until it becomes like rice
Add cream cheese in food processor with the rice. Run it another couple seconds to blend the cream cheese with the cauli-rice.
Prepare the food to go inside sushi rolls - Slice the cucumber into slices with a peeler. Then cut up avocado into slices. Slice the salmon into strips.
- Lay out nori sheet and spread cauli-rice over it. Then add the items you want inside - cucumber slices, avocado, salmon. You can use any variation you like. For a California Roll, it is cucumber and avocado.
Roll up the nori with food items inside. Then cut into bite size pieces. Serve with Coconut Aminos instead of soy.
