Keto Sweet & Sour Chicken
The key component of sweet and sour chicken is in the sauce, and that is what this recipe is all about. Especially for us on the Keto diet who should stay away from soy and sugar. This is soy-free and sugar-free, and tastes like the real deal!
Then, to give the chicken that “breaded” texture, just add some Parmesan cheese over the freshly cooked chicken and you’ve got the desired texture.
- Chicken, de-boned, cut up
- Parmesan cheese
- 1 Cup Chicken broth
- 2 TB Coconut Aminos
- 2 TB Apple cider vinegar
- 2 TB White wine (or white wine vinegar)
- 1 TB Lemon juice
- 1 TB Fish sauce
- 2 TB Tomato paste
- 1/2 Tsp Garlic powder
- 1/2 Tsp Salt
- 1/3 cup Swerve confectioners
- pinch Xanthun Gum (to thicken)
Fry cut-up chicken over stove in coconut or avocado oil until cooked, then sprinkle Parmesan cheese over chicken and stir to mix in with chicken.
Combine the sauce ingredients in a pot and bring to a boil., then simmer for 30 min (stir occasionally). Remove from heat and add xanthun gum (gradually) to thicken the sauce.
Add sauce with the chicken and serve!
