Lemon Baked Chicken & Mushrooms

A simple chicken recipe that is easy to throw together and provides a gourmet touch with a topping of mushrooms.

Ingredients
  • 4 Boneless Chicken breasts (skinned)
  • Olive oil
  • 1 Lemon
  • Seasonings (of choice) All purpose seasoning, salt, pepper, garlic powder)
MUSHROOM SAUCE:
  • 1/4 Cup Butter
  • 2 Cups Mushrooms, sliced
  • 2 TB Almond flour
  • 1/2 Cup Chicken Broth
Instructions
  1. Place Chicken in a baking dish and pour olive oil on top. Turn chicken over to coat other side with olive oil. Squeeze half a lemon over the chicken. Sprinkle seasoning over the top. Slice other half of lemon and put a slice on top of each chicken piece.

  2. Bake at 350 for 30-40 minutes until chicken is fully cooked.

  3. Brown mushrooms in butter in a pan until browned. Sprinkle almond flour in over mushrooms, then add the chicken broth and stir until blended and sauce is somewhat thickened.

  4. Pour mushroom sauce over cooked chicken and serve.
