Low Carb High Fat Chicken Salad
Take chicken salad to a whole new level with high fat additives – like hard-boiled eggs, olives, sunflower seeds and chia seeds. Of course the homemade mayo with the cooked chicken gives even more added fat.
- Chicken, cooked, cut up
- Celery, finely chopped
- Homemade Mayo (see post link for recipe)
- Chopped Lettuce (Romaine or butter lettuce)
- Black (or green) olives
- Hard boiled egg
- Sunflower seeds
- Chia seeds
- Tomatoes, if desired (optional)
Combine cooked chicken pieces with chopped celery and mayo. Add other ingredients to your liking. It's a salad, so no need for measurements - just add in the quantity of ingredients you want!
No need for salad dressing since the homemade mayo brings everything together!
