These crackers turned out to be a bit of work in the making, but well worth the effort if you like really tasty cheese crackers to snack on. This recipe is amended in cooking time from the FatForWeightLoss “Fathead Crackers” recipe, since their recipe was difficult to cut after 20 min. of baking and then got too crispy and burnt from the additional 10 min. baking time.
- 1 Cup Mozzarella cheese
- 1 TB Almond Flour
- 1 Egg
Heat the mozzarella cheese in microwave (for about 20 seconds) or in double broiler until melted.
In a bowl stir mozzarella cheese with almond flour and egg. May need to mix with hands to get completely mixed together.
Place cheese mixture on a parchment paper lined baking sheet. Put another parchment paper on top to roll out the mixture flat and in a rectangular shape.
Bake at 350 for 10 minutes, then remove from oven to cut into cracker-size pieces. Put back in over for another 10 minutes (for a total of 20 min. baking time).
