Prepare pancake mix and cook per instructions on package, then set aside (keep warm).
Cook bacon (in oven or stove-top)
Whisk together the water, powdered Swerve, maple extract and vanilla extract in a saucepan. Bring to a gentle boil, then simmer for about 5 minutes until Swerve dissolves.
Pour mixture into a blender and puree. Slowly add Xanthan Gum until smooth (no lumps).
Let the mixture sit to allow the syrup to thicken. After use, store in refrigerator.
