Chunky Fudgey Low Carb Brownies

  • 8 oz Chocolate (2 bars), unsweetened
  • 3/4 Cup Butter, melted
  • 1 1/4 Cup Swerve sweetener
  • 2 Lg Eggs
  • 2 Tsp Vanilla extract
  • 3/4 Cup Almond Flour
  • 1/4 Cup Cocoa
  • 1 Tsp Salt


  1. Chop chocolate into chunks. Melt half (1 bar) and save rest.

  2. Mix butter and Swerve. Then beat in the eggs and vanilla for 1-2 minutes until the mixture is fluffy.

  3. Stir in the melted chocolate (after cools a bit), then sift in the flour, cocoa and salt.

  4. Fold the dry ingredients into the wet ingredients. Don't over mix (or brownies will be more cake-like in texture)

  5. Fold in the chocolate chunks. Then transfer the batter into a parchment lined square baking pan.

  6. Bake at 350 for 20-25 minutes - depending on how fudgey you like your brownies. Let cool completely before cutting and serving.
