Peel and slice jicama into quarter slices, like french fries.
Bowl jicama in pot (with salt) for 10-15 minutes. Then drain in strainer.
Put drained jicama in large bowl and add rest of ingredients. Mix well (with hands or spoon) to cover all jicama pieces in the oil and seasonings.
Line a baking pan with parchment paper and/or cooling racks. Place jicama pieces on the parchment or racks. Spread out the pieces so they are not over-lapping each other.
Bake at 400 for 45-50 minutes, maybe longer, until crisp.
