Ingredients

  • 4 Eggs
  • 1/4 cup Heavy cream
  • Green & red peppers
  • Mushrooms
  • Green onions
  • Spinach
  • Cheddar cheese, shredded
  • Bacon bits

Instructions

  1. Chop vegetables and bacon into small bacon bits (if no bacon bits).

  2. Whisk eggs in a bowl and add heavy cream.

  3. Using a muffin pan, line with baking cups or grease the pan. Pour egg mixture into each muffin cup (about 3/4 full). Then add vegetables, cheese, bacon into each muffin cup filled with eggs. Do a variety of combinations into each muffin cup. Top with cheese.

  4. Bake in preheated oven at 350 for 20 minutes. Can top with more cheese after 15 min., if desired.
