Breakfast Ham & Egg Roll-ups

  • 4 Eggs
  • 2 TB Heavy cream
  • pinch Salt & Pepper
  • 6 slices Ham (packaged slices)
  • Cheddar Cheese, shredded (for topping)

Omelette Vegetables:

  • 1/4 Green pepper, diced
  • 1 Green onion, chopped
  • 1/2 cup Mushrooms, diced
  • 1 cup Spinach, fresh


  1. Whisk eggs, cream, salt and pepper. Set aside

  2. Chop vegetables for omelette. Oil fry pan with coconut or avocado oil and add chopped vegetable mixture. Saute for about 3 minutes until cooked. NOTE: Can use any combination of vegetables of your choice instead of the above.

  3. Pour egg mixture into pan and flip omelette when cooked on bottom to cook on other side. NOTE: Can divide in half to flip more easily since omelette is going to be cut up into portions.

  4. Divide omelette into portions and place on top of ham slices. Then roll up and place in a baking dish.

  5. Sprinkle cheddar cheese over top and bake at 350 for 3-4 minutes until cheese is melted. NOTE: Can use hollandaise sauce over top instead of cheddar cheese, in which case no baking is necessary.

NOTE: Can use tortillas instead of ham for egg roll-ups.
