Zucchini Cauliflower Fritters

This combination of zucchini and cauliflower make up a tasty fritter dish. It’s a great keto diet side dish with any meal, even breakfast.

- 1-2 Large Zucchini
- 1/2 Head Cauliflower
- 2 Lg Eggs
- Bunch Scallions / Green Onions, chopped
- 2 Stalks Celery, minced
- 1/2 cup Parmesan Cheese
- 1/4 Cup Almond flour
- 1/8 Tsp Baking powder
- 1 Tsp Garlic powder
- 1/4 Tsp (each) Cilantro, parsley, salt, pepper
Cook the cauliflower. When cooked, put in food processor and run a few seconds to create cauli rice. Remove and set aside.
Put zucchini in food processor and run a few seconds to mince.
Combine zucchini and cauliflower in a large bowl. Add all the other ingredients and stir with a spoon until well mixed.
Scoop out the mixture into pancake-sized portions and put on an oiled large grill pan. The pan should be very hot before putting mixture on. Cook a few minutes on each side - until browned.
Serve with sour cream topping, if desire.
