Chicken Curry Masala

When you want to spice up your menu, this chicken curry masala will do the job!
Masala means a varying blend of spices used in Indian cooking. This variety of spices creates an orange curry sauce.
Jump to RecipeThere were dozens and dozens of chicken curry masala recipes and I mixed and matched for my own preferred taste. What that means is essentially, I left out gingeroot (I don’t like ginger), and picked the spices that I decided were the best spice blend (out of all the various spice blends) for this recipe.


A basic Masala spice mix consists of:
- Coriander powder
- Cumin powder
- Cardamom powder
- Nutmeg
- Cinnamon powder
- Paprika
- Turmeric powder
- Pepper
For a Garam Masala spice blend, the coriander, cumin, cardamom are seeds, not powder, and ground to powder. Add in:
- Fennel Seeds
- Mustard Seeds
- Cloves
- Peppercorns
- Cloves
The combination of spices I used in this recipe was a great blend that turned out to make a wonderful curry dish.

- 2 cups Chicken, cooked
- 2 TB Lemon Juice
- 2 Cloves Garlic, minced
- 1 Tsp Cumin Powder
- 1/2 Tsp Coriander powder
- 1 Tsp Paprika
- 1 Tsp Chili Powder
- 1 Tsp Turmeric
- 1/2 Tsp Cayenne Pepper (optional) (for extra hot spice)
- pinch Salt and pepper
- 2 TB Yogurt (or 6 TB heavy cream)
- 2 TB Avocado or Coconut Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Tsp Coriander
- 1 Tsp Paprika
- 1 Tsp Chili Powder
- 1 Tsp Turmeric
- 1 Gingeroot (2" long), minced
- 1 TB Tomato Paste
- 1 Can Tomato Sauce
- 4 TB Yogurt (or cream)

Cut up chicken into bite-sized pieces. Set aside.

In a large mixing bowl, add all marinade ingredients – the chopped onions, minced garlic, ginger, seasonings, tomato paste, tomato sauce, yogurt. Stir until well combined.

Add the cut up chicken into the marinade and mix.

Marinade for approx. 30 minutes (or longer, even overnight!).

If you want to make Tikka Chicken Masala (roasted on a skewer), grill the marinaded chicken on a skewer. Otherwise, just fry the marinaded chicken in a little oil until somewhat crispy and browned.

Combine all sauce ingredients into a medium sized pot.

Stir occasionally for approx. 20-30 minutes.

Add chicken to the sauce. Can serve over Cauli Rice.
