Keto Deep Fried Squash Fries

It’s not a french fry, but it’s a tasty fried vegetable that is deep fried in bacon grease. Most of the keto “french fried” vegetable recipes call for baking, but this recipe is about a special blend of seasoning and frying in bacon grease to give it a flavor to rejoice in!

- 2 White squash (or zucchini)
- 1 cup Pork rinds, ground (like bread crumbs)
- 2 TB Coconut or Avocado oil (to dip squash in)
- 1 Cup Bacon grease (for deep fry) (or keto-friendly oil)
- Parmesan cheese
- Seasoning - All-purpose, salt, garlic powder

Cut squash (or zucchini) into quarter strips, like french fries.

Ground pork rinds into fine bread crumbs. Add seasoning and mix up. Put mix into a baggie (or container with lid).

Put oil into a storage container and add squash pieces. Shake up to get squash coated with oil. Then remove squash and put into the baggie or bowl containing the ground pork rinds. Shake up to coat the squash.

Heat up the bacon grease in a pot with deep fryer and get very hot before adding the coated squash into the grease. (If you don't have a deep fryer, use a large fry pan with enough grease for frying). Can sprinkle in more Parmesan cheese and salt while it's frying.

Fry the squash a few minutes then lift fryer to strain grease / oil from vegetables.
