Low Carb Keto Crispy Chicken

This was sort of an accidental fried chicken recipe that turned out quite tasty. With a coating of well seasoned ground pork rinds, this chicken was a hit at the dinner table. That, and served over some lemon-butter sauce made it even more delicious.
The side dishes were a salad and the yummy cheesy eggplant recipe.

- 2 Chicken breasts, skinned, boneless
- 1 cup Pork rinds, ground (like bread crumbs)
- 1 Egg
- Seasoning: salt, all-purpose seasoning, garlic powder
- Avocado or coconut oil (for fry pan)
- 2-3 TB Butter
- 1 Tsp Lemon juice
- 1/8 Tsp Dijon mustard
- 1 Tsp Garlic powder

Pound the chicken flat. Dip the chicken in whisked eggs, then in the ground pork rinds (which can be ground up in food processor or blender).

Cook in pan with oil about 4-5 min. on each side until chicken is cooked. Try not to over-cook to keep meat tender.

(Optional) Serve the chicken topped with butter-lemon-garlic sauce - mix all sauce ingredients in small saucepan and heat. Pour over chicken.
